Carrot Pupcake with Dog-Friendly Yoghurt Icing
Ingredients:
- 1 cup grated carrots
- 1 cup wholemeal flour
- 1 egg
- 1/4 cup unsweetened applesauce (homemade is best)
- 1 teaspoon baking powder
Yoghurt Icing:
- Blend plain yogurt with unsweetened applesauce for a creamy, delicious topping.
Instructions:
- Preheat your oven to 180°C (350°F).
- Mix all ingredients in a bowl until smooth.
- Pour batter into a greased festive mould such as a Christmas tree, candy cane, or wreath.
- Bake for 20–25 minutes or until a toothpick inserted into the centre comes out clean.
- Allow to cool, then top with yoghurt frosting.
