Carrot Pupcake with Dog-Friendly Yoghurt Icing

Ingredients:

  • 1 cup grated carrots
  • 1 cup wholemeal flour
  • 1 egg
  • 1/4 cup unsweetened applesauce (homemade is best)
  • 1 teaspoon baking powder

Yoghurt Icing:

  • Blend plain yogurt with unsweetened applesauce for a creamy, delicious topping.

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Mix all ingredients in a bowl until smooth.
  3. Pour batter into a greased festive mould such as a Christmas tree, candy cane, or wreath.
  4. Bake for 20–25 minutes or until a toothpick inserted into the centre comes out clean.
  5. Allow to cool, then top with yoghurt frosting.
